Today I got together with my Mother & Sisters-in-Love for the ultimate Christmas treat bake-a-thon! With White Christmas on in the background and our handy aprons (<–see what I did there? ;-)) tied snug, we got to mixing! My mom-in-love, Sheila, shared two nostalgic treats she always loved growing up: the Marshmallow Christmas Wreaths & the Trix Christmas Candies. So cute and colorful and perfect recipes for kids to help mix with their hands! (Oh I can’t wait for Vienna to be old enough to join me in the kitchen next year!!). For the chocolate lovers, there are 3 scrumptious options: the Turtle Candies, Anna’s Chocolate Crack (technically it’s Chocolate Peanut-Butter Toffee but I’ve only ever referred to it as “Crack” …so. unbelievably. addictive.), and Homemade Mounds Bars (just like the Mounds candy bar, if the Mounds candy bar was made in heaven by baking angels). Last but not least is my Christmas Dream Cookie– a recipe I invented and have been perfecting since I was 16! Once you’ve had these cookies, it won’t feel like Christmas without them! Trust me! So here you go, 6 Amazing Keeler Christmas Treat recipes you’ll crave every year! The best way to whip them up is with family, so gather up your girls and Kitchen Aid Mixers and start a sweet new tradition this year!
1- Christmas Dream Cookies
Step 1: Preheat oven to 375 degrees
Step 2: Begin melting 1 bag white chocolate chips in 10 sec increments in the microwave (stir in between) or by placing the chocolate in a heat safe bowl and resting it over a small pot of simmering water on your stove top (the water shouldn’t touch the bottom of the bowl). Stir frequently until velvety smooth and keep warm.
Step 3: Chop 1 cup fresh whole cranberries & 3/4 cup shelled roasted and salted pistachios, & 3/4 cup shredded coconut. Place to the side for later.
Step 4: In your mixer, combine 2 3/4 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 1 cup butter softened, 1 1/2 cup white sugar (can substitute Stevia), 1 egg, 1 tsp vanilla extract. Stir dough.
Step 5: Slowly stir in cranberries, pistachios & coconut into the dough.
Step 6: Pinch dough into preferred cookie size, roll into a ball and place on dark non stick cookie pan, pressing on the dough to flatten it slightly on the pan.
Step 7: Bake in oven for 10-14 minutes. Check it towards the end. You want the cookies to stay mostly white, with a very slight golden brown on the bottom. Let cool for 5 minutes.
Step 8: ((My favorite step!)) Dip the top of the cookies in the melted white chocolate, place on parchment paper & sprinkle tops of cookies with shredded coconut, fresh lemon zest, and a light squeeze of lemon juice! Eat warm or let cool until the white chocolate hardens! DROOL!
2- Anna’s Chocolate “Crack” (aka Chocolate Peanut-Butter Toffee)
Step 1: Spread sliced almonds on baking sheet & bake at 350 degrees until lightly toasted, 5-7 minutes. Remove from pan and let cool.
Step 2: Line pan with aluminum foil, mist with cooking spray. Arrange 1 sleeve of saltine crackers in one layer.
Step 3: In a small pot, bring 1 cup butter and 1 cup packed brown sugar to a boil, stirring occasionally. Remove from heat and stir in 1/2 tsp vanilla.
Step 4: Spread thin layer of the sugar mixture over the saltine crackers. Bake for 13 minutes.
Step 5: Add peanut butter over the baked crackers and put back in the oven for 3 minutes (or just long enough to melt). Remove from oven and spread peanut butter in an even layer.
Step 6: Sprinkle with semi-sweet and white chocolate chips and spread when melty.
Step 7: Sprinkle with roasted almonds and let cool in fridge.
Step 8: Once cool, remove from pan and serve in broken pieces.
3- Turtle Candies
Step 1: Layer mini-pretzels on a greased baking pan.
Step 2: Unwrap chocolate Rolo candies and place 1 Rolo on top of each pretzel.
Step 3: Bake in the oven at 350 degrees for 3 minutes until Rolo is soft but not totally melted.
Step 4: Press whole raw or roasted pecan on top of the Rolo to smoosh it into the pretzel.
Step 5: Let cool and remove from pan.
4- Homemade Mounds Bars
Step 1: Crush 18 graham crackers and mix with 1/4 cup sugar & 1/2 cup melted butter.
Step 2: Spread graham cracker mixture in the bottom of a lightly greased baking pan and bake at 350 for 10 minutes.
Step 3: In mixing bowl, combine 1 can sweetened condensed milk & 2 cups shredded coconut.
Step 4: Spread coconut mixture over cracker crust & bake for another 15 minutes.
Step 5: Spread semi-sweet chocolate chips over coconut and allow to melt. Spread chocolate into an even layer over the whole surface.
Step 6: Cool in the fridge and cut into bars.
5- Trix Candies
Step 1: Melt 7 cubes of almond bark in the microwave.
Step 2: Stir 4 cups of Trix cereal into the melted almond bark.
Step 3: Scoop Trix mixture into mounds and let cool on wax paper.
6- Marshmallow Christmas Wreaths
Step 1: In a medium sauce pan, melt 4 cups of mini marshmallows on the stove top with 1/2 cup butter & 1 tsp vanilla.
Step 2: Stir green food coloring into the marshmallow mixture until desired color green is reached.
Step 3: Mix 4 cups of Corn Flakes cereal into the green marshmallow mixture until evenly coated.
Step 4: Arrange Corn Flake mixture into wreath shapes.
Step 5: Decorate wreaths with red sprinkles.
